We’re all too familiar with the tons of ways one can do an omelet, with a rainbow of veggies, mushrooms, deli meats, spices, and fancy sauces…etc. However sometimes going the “simple” way has its own charm.

And today, after having tried many amazing omelets, this simple omelet recipe is still my all-time favorite: eggs, dried mint powder and salt cooked with olive oil. This is an omelet that is common in Lebanese homes, and in our case our late grandmother used to make it for us on Saturdays when we were kids.

Some folks have issues using olive oil for frying due to its low heat tolerance. However we prepare this omelet on low/medium heat so the olive oil doesn’t heat up too much and oxidize (usually, once heated oil starts to smoke it’s an indication of oxidization and that it’s becoming full with free-radicals – not healthy).
Dried mint can be purchased at Middle Eastern grocery stores, or online. It can also be easily made at home using this method.

Hi Zeki – yep nothing else, just eggs, mint and salt.. the beauty of this one is in its simplicity. I am familiar with the versions with parsley and green onions and love them too. So many good ways one can enjoy eggs, it’s such a blessing!
